The Best Oil Free Hummus

Ingredients

  • 1 - 2 tsp ice water
  • 1 can drained chickpeas
  • 1 - 2 tbsp aquafaba (liquid from canned chickpeas)
  • 2 tbsp tahini (pourable works best)
  • 1/2 lemon, juiced
  • 1 - 2 garlic cloves
  • 1 handful fresh parsley
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper (or more to taste)
  • 1/2 tsp sea salt
  • freshly ground pepper to taste
  • Optional: paprika

Instructions

  • Prepare the Ingredients:
    Add a few ice cubes to a small cup of water. Set aside. Drain the chickpeas, reserving the aquafaba (the liquid from the can). Set aside 1-2 tablespoons of aquafaba. Peel and roughly chop the garlic cloves. Juice half a lemon.
  • In a food processor, combine all of the ingredients. Process for about a minute until the mixture is creamy and smooth. This step helps whip the tahini, making the hummus extra smooth.
  • Scrape down the sides of the food processor bowl. Process again until the mixture is thick and smooth, about 1-2 minutes.
  • Taste the hummus and adjust the seasoning if necessary. You can add more salt, lemon juice, or cayenne pepper to suit your taste.
  • Transfer the hummus to a serving bowl. Garnish with a sprinkle of cumin or paprika if desired.
