Prepare the Ingredients:Add a few ice cubes to a small cup of water. Set aside. Drain the chickpeas, reserving the aquafaba (the liquid from the can). Set aside 1-2 tablespoons of aquafaba. Peel and roughly chop the garlic cloves. Juice half a lemon. In a food processor, combine all of the ingredients. Process for about a minute until the mixture is creamy and smooth. This step helps whip the tahini, making the hummus extra smooth.
Scrape down the sides of the food processor bowl. Process again until the mixture is thick and smooth, about 1-2 minutes.
Taste the hummus and adjust the seasoning if necessary. You can add more salt, lemon juice, or cayenne pepper to suit your taste.
Transfer the hummus to a serving bowl. Garnish with a sprinkle of cumin or paprika if desired.
