1 Nonstick Waffle Maker
Ingredients
1cuprolled oats
1/4cupTrader Joe's ancient grains (or replace with additional rolled oats)
2tbspflaxseed meal
zest1/2 lemon
1/4tsp cinnamon
1/2 dropperStevia drops (I like Sweet Leaf Vanilla Creme) - OPTIONAL
1tspbaking powder
1/2medium banana
3/4cupalmond milk (other plant based milks can be used)
1/4cupwater
1/2tspapple cider vinegar
1/2 tbspdate syrup
1/2tsp vanilla extract
2tbspaquafaba (liquid from can of chickpeas)
1/8cupgrated carrots
1/8cupfrozen rice cauliflower
Instructions
Preheat a nonstick waffle maker.
In food processor or a high-speed blender, combine everything and thoroughly blend.
Portion batter onto preheated waffle maker and spread around to all edges. Close lid and cook per waffle maker’s manufacturer's instructions.
Gently remove waffles when done. The batter can either be cooked or stored in the refrigerator to cook another day.
Serve with fresh fruit, dollop of soy yogurt and maple syrup.
