If you follow a whole food plant-based lifestyle oil free lifestyle, this hummus recipe can be a perfect addition to your repertoire. It’s creamy, flavorful, and incredibly versatile. Plus, it’s packed with protein and fiber, making it a nutritious option for any meal or snack. Whether you use it as a dip, a spread, or even a salad dressing, hummus can add a burst of flavor and a nutritional boost to any dish.

The key to achieving the perfect hummus lies in a few simple yet game-changing techniques:

  1. Ice Water: Just one or two tablespoons of ice water added during blending transforms the texture of your hummus, making it incredibly light and fluffy. The cold temperature helps emulsify the ingredients, resulting in a smoother consistency.
  2. Aquafaba: This magical liquid, which is simply the water from a can of chickpeas, can elevate your hummus to new heights. It adds creaminess and a velvety texture that you just can’t get from using water alone. Plus, it’s a great way to reduce waste and use every part of the chickpea!
  3. Extended Blending Time: Don’t rush the blending process. Allowing the food processor to run for a couple of minutes lets the heat from the machine work its magic. This heat, combined with thorough blending, helps break down the chickpeas and tahini into a perfectly smooth mixture.

Serving Suggestions:

  • Classic Style: Sprinkle with paprika and garnish with fresh parsley.
  • Toppings Galore: Top with toasted pine nuts, chopped olives, or sun-dried tomatoes (avoid oil-packed) for an extra burst of flavor.
  • Dippers: Serve with fresh veggies like carrots, cucumbers, bell peppers, or use it as a spread for sandwiches and wraps.

Storage:

Store your hummus in an airtight container in the refrigerator for up to a week. If it thickens, you can stir in a little more aquafaba or water before serving.

Final Thoughts:

This hummus is not only delicious but also incredibly easy to make. The secret ingredients—ice water and aquafaba—along with a good amount of blending time, ensure a perfectly smooth and creamy texture. Enjoy your homemade hummus and feel free to experiment with additional flavors and toppings to make it your own!

The Best Oil Free Hummus

Ingredients

  • 1 - 2 tsp ice water
  • 1 can drained chickpeas
  • 1 - 2 tbsp aquafaba (liquid from canned chickpeas)
  • 2 tbsp tahini (pourable works best)
  • 1/2 lemon, juiced
  • 1 - 2 garlic cloves
  • 1 handful fresh parsley
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper (or more to taste)
  • 1/2 tsp sea salt
  • freshly ground pepper to taste
  • Optional: paprika

Instructions

  • Prepare the Ingredients:
Add a few ice cubes to a small cup of water. Set aside. Drain the chickpeas, reserving the aquafaba (the liquid from the can). Set aside 1-2 tablespoons of aquafaba. Peel and roughly chop the garlic cloves. Juice half a lemon.
  • In a food processor, combine all of the ingredients. Process for about a minute until the mixture is creamy and smooth. This step helps whip the tahini, making the hummus extra smooth.
  • Scrape down the sides of the food processor bowl. Process again until the mixture is thick and smooth, about 1-2 minutes.
  • Taste the hummus and adjust the seasoning if necessary. You can add more salt, lemon juice, or cayenne pepper to suit your taste.
  • Transfer the hummus to a serving bowl. Garnish with a sprinkle of cumin or paprika if desired.
