Equipment

  • 1 Nonstick Waffle Maker

Ingredients

  • 1 cup rolled oats
  • 1/4 cup Trader Joe's ancient grains (or replace with additional rolled oats)
  • 2 tbsp flaxseed meal
  • zest 1/2 lemon
  • 1/4 tsp cinnamon
  • 1/2 dropper Stevia drops (I like Sweet Leaf Vanilla Creme) - OPTIONAL
  • 1 tsp baking powder
  • 1/2 medium banana
  • 3/4 cup almond milk (other plant based milks can be used)
  • 1/4 cup water
  • 1/2 tsp apple cider vinegar
  • 1/2 tbsp date syrup
  • 1/2 tsp vanilla extract
  • 2 tbsp aquafaba (liquid from can of chickpeas)
  • 1/8 cup grated carrots
  • 1/8 cup frozen rice cauliflower

Instructions

  • Preheat a nonstick waffle maker.
  • In food processor or a high-speed blender, combine everything and thoroughly blend.
  • Portion batter onto preheated waffle maker and spread around to all edges. Close lid and cook per waffle maker’s manufacturer's instructions.
  • Gently remove waffles when done. The batter can either be cooked or stored in the refrigerator to cook another day.
  • Serve with fresh fruit, dollop of soy yogurt and maple syrup.
